Dr. Stephenson is a full-time senior-lecturer teaching a wide variety of undergraduate and graduate level courses in dietetics and Human Nutrition. Courses include Human Nutrition and Wellness, Introductory Nutrition, Experimental Foods, Nutrition Issues in Physical Activity, Research in Nutrition, and Advanced Nutrition. In addition to major specific courses Dr. Stephenson has also been an Instructor for UK 101: Academic Orientation for several years and has a keen interest in helping students to adjust and excel at the University of Kentucky.
Dr. Stephenson has a keen interest in promoting and mentoring undergraduate research. She has mentored over 100 undergraduate nutrition-related research projects. All Human Nutrition students present an undergraduate research project at the UK Undergraduate Showcase of Scholars.
Professor Stephenson is Director of Undergraduate Studies for the Department of Dietetics and Human Nutrition. She is the faculty advisor for the Student Dietetic and Nutrition Association, an organization that is active on campus and with the Kentucky and American Academy of Nutrition and Dietetics. The SDA participates in numerous philanthropic events throughout the year including Kids Café, National Nutrition Month, meals for the Ronald McDonald House, educational sessions for elementary students, and hunger work. The SDA has raised over $2500 to support school lunch feeding at the Kentucky Academy in Ghana, Africa.
Dr. Stephenson has participated in the writing and review of several nutrition textbooks. Her research interests include developing innovative teaching materials and program-level activities to enhance student learning. Professor Stephenson has incorporated service learning into many of her classes and has had the opportunity to present on this topic at professional meetings.
Dr. Stephenson is a member of the Academy of Nutrtion and Dietetics, American College of Nutrition, American Alliance for Health, Physical Education, Recreation, and Dance, and the North American Colleges & Teachers of Agriculture. She serves as the Chair-elect of the Nutrition Educators of Health Professionals practice group of the Academy of Nutrition and Dietetics..
Dr. Stephenson has received several awards for recognition of excellence in teaching and undergraduate mentoring. These include the College of Agriculture Student Council Early Career Excellence in Teaching Award in 2008, NACTA Teacher Fellow in 2009, eUreKa/SPUR undergraduate research faculty mentor award in 2009, Patricia Brantley Todd Award of Excellence for Teaching in 2009, Kentucky Association of Family & Consumer Sciences honorary member recognition in 2010, Gamma Sigma Delta Master Teacher award in 2012, and UK College of Nursing Excellence in teaching award in 2012. She has been recognized by the UK College of Education as a "Teach Who Makes A Difference."
