Biography

Dr. Stephenson is a full-time lecturer who teaches a wide variety of undergraduate and graduate level nutrition and food science courses.  Courses include Human Nutrition & Wellness, Introductory Nutrition, Experimental Foods, Nutrition Issues in Physical Activity, Seminar in Nutrition & Food Science, and Advanced Nutrition.  She also teaches Special Issues in Nutrition & Food Science, a research-oriented course for Human Nutrition majors.  This course allows undergraduate students the opportunity to design, execute, and present the findings for a project related to their personal interests.   Students have published their research in Kaleidoscope and have given oral and poster presentations at Posters at the Capitol and the UK Undergraduate Showcase of Scholars.  In addition to major specific courses Dr. Stephenson has also been an Instructor for UK 101: Academic Orientation and has a keen interest in helping students to adjust and excel at the University of Kentucky.

 

Professor Stephenson is Director of Undergrad Studies in and an advisor for Human Nutrition and Dietetic students.  She is the faculty advisor for the Student Dietetic Association, an organization that is active on campus and with the Kentucky and American Dietetic Associations.  The SDA participates in numerous philanthropic events throughout the year including Kids Café, National Nutrition Month, meals for the Ronald McDonald House, educational sessions for elementary students, and hunger work. 

 

Dr. Stephenson has participated in the review of several introductory nutrition textbooks and has interest in text and supplemental materials writing.  Her research focus is on the health effects of soy foods, specifically in hemodialyis patients and individuals with Type 1 Diabetes Mellitus.  She also has interest in developing innovative teaching materials to enhance student learning. 

 

Dr. Stephenson is a member of the American Dietetic Association, American College of Nutrition, American Alliance for Health, Physical Education, Recreation, and Dance, and the North American Colleges & Teachers of Agriculture.  She received the College of Agriculture Student Council Early Career Excellence in Teaching Award in 2008 and the NACTA Teacher Fellow and eUreKa/SPUR undergraduate research faculty mentor award in 2009.
