Students in Human Nutrition have the opportunity to be involved in a variety of volunteer service and outreach opportunities. Undergraduate human nutrition students volunteered at the Bluegrass Dental Society's "Explore-A-Smile" program at the Explorium in downtown Lexington. Students volunteered during the week of February 23-27, 2009 to educate kindergarteners and first graders from 27 counties in Kentucky about the importance of proper dental care. This was a great opportunity for the students to use their knowledge of nutrition as it relates to dental health. Several of the students participating in this program are human nutrition majors who are heading to Dental School at the University of Louisville and the University of Kentucky in August.

As part of National Nutrition Month, twelve undergraduate human nutrition and dietetic students and the Student Dietetic Association developed a healthy eating program for kindergarteners and second graders at the Sts Peter & Paul School in downtown Lexington. UK students provided interactive educational instruction on the Food Guide Pyramid and helped the children to put together their own recipe book of healthy snacks. Then, the children all got to learn about making healthy snacks and had the opportunity to taste them. UK students helped the children make "Ants on a Log", crackers, cheese, apples with a cinnamon topping, blueberry/raspberry smoothies, and trail mix. The children were encouraged to trying making these snacks on their own at home. This program was well-received by nearly 90 students at SPPS!

Over 200 UK students volunteered at Fayette County Second Sunday (link to SS site) in October, 2010. Students from NFS 474: Research in Nutrition, conducted one-on-one surveys with attendees. Students from several classes and both the human nutrition and dietetic majors also handed out stickers and passed out apples to those in attendance. Student volunteers are needed for Second Sunday 2011 - please contact Dr. Stephenson if interested.
