Classification of Livestock
Market Classes - Grades
Grades are given to live animals as an indication of what can be expected of that animal's carcass. The United State Department of Agriculture (USDA) provides the guidelines for these grades. These grades are used as a reference for the marketing and sale of livestock.
Types of grades include:
- Yield Grades - refers to the expected percent of boneless, closely trimmed retail cuts from the round, loin, rib and chuck on a carcass weight basis.
