When
it is time for the fish to leave the commercial pond and go to
the processing plant or pay lake, the fish farmer must sort, or
grade, the fish. This simply means separating the large fish from
the small ones. Sorting not only helps the farmer count the fish,
but also results in a premium at the market.
The first step in sorting is catching the fish. To do this,
the fish are gathered in a V-trap or a seigning net. Once all
the fish are caught, people pick out the different sized fish.
