Jerky

Jerky is made by cutting thin slices of red meat such as beef, venison, buffalo, etc. and then marinating the slices in a preservative such as salt. It is then cooked slowly at low temperatures. The early settlers accomplished this by hanging it out in the sun to cook and dry out.
