Nutrition & Food Science

Nutrition and Food Science Extension
The department provides scientific support for County Extension Agents in all 120 Kentucky counties.  We work with Agents in Family & Consumer Sciences, Community & Leadership Development, 4-H & Youth Development, and Agriculture & Natural Resources.  We use evidence-based programs to extend the knowledge of the University to the public and to Kentucky communities through Cooperative Extension Service offices.  There are opportunities for undergraduate and graduate students to work on applied research projects and to participate in summer internships.






Extension Faculty
Specialists in Food & Nutrition have academic appointments in the department with responsibilities that include program development, staff training, and program evaluation.  These faculty members also teach undergraduate and graduate courses and conduct applied research to assess program efficacy and to further program development.  Extension faculty work with several multi-disciplinary projects including the School of Human Environmental Sciences Healthy Weight Task Force, the College of Agriculture Food Systems Initiative, Family and Consumer Sciences Extension's Nutrition Education Programs, and the Health Education through Extension Leadership Program.
