The temperatures are getting cooler and the holidays are upon us. The flu season is also here.
A few common sense tips to prevent the flu:
On a lighter note this is the time of year to think of pumpkins. Not only are pumpkins very tasty, they are also healthy. If you like fresh pumpkins, there are several ways to fix it so it can be used in your favorite pie, bread, or cake recipe. My favorite way to prepare for use is:
You can use right away, store in the refrigerator until the next day, or freeze until ready to use. I like to freeze 1 cup per freezer bag, so it is easy to get out what you need.
This is my family's favorite pumpkin pie recipe. (I'm often asked to share it this time of year.) My mom got this recipe as a new bride almost 50 years ago. We have changed it over the years to make it special.
Mom's Pumpkin Pie Filling
3 beaten eggs
2 Tbsp melted margarine
2 Tbsp syrup or sorghum
1 3/4 cup cooked or canned pumpkin
1/2 cup sugar
1/2 cup brown sugar
1 Tbsp self rising flour
1 tsp cinnamon
1 tsp allspice
1/2 tsp nutmeg
1 cup evaporated milk
In a large bowl mix all ingredients with a spoon. Pour in your favorite pie crust-homemade, frozen (thawed), or graham cracker (bake for 5 min before filling).
Sprinkle a few nuts on top if you like ---pecan halves, English walnuts, or black walnuts
Bake at 455 for 12 min. Reduce heat to 350 & bake for 35-45 minutes until a knife inserted near the center comes out clean.
Delicious warm. Chill leftovers. Also freezes well.

Ovarian Cancer Screening & Research
One of KEHA’s main health objectives has been to assist in funding ovarian cancer screening and research at the University of Kentucky. This program began in 1977, and members were asked to donate $1 each per year. In recent years, many homemakers have contributed or raised much more than $1 each. As of April 2009, donations totaled more than $1,000,000.If you would like to send a donation, mail check to:

Educational Resources from the UK Ovarian Cancer Research Program
Kentucky Women’s Health Registry
Another important project is participation in the Kentucky Women’s Health Registry. There’s no cost but a little of your time to fill out a survey. The information collected will be used in research related to women’s health that will benefit not only you but your daughters, granddaughters, and all women in Kentucky.
