Food Science is a rapidly evolving discipline that applies basic science and engineering to study the
quality, nutritional value, and safety of foods.

Food scientists are professionals who:

  • Use science and technology to study everything that happens to food from the time it leaves the farm to the time it reaches your dinner plate.
  • Apply biological and physical sciences to learn about the nature of foods, their nutrient composition and values, and the principles underlying the processing, preservation, and improvement of human foods.
  • Play a leadership role in the conversion of raw agricultural and aquatic products into a wide variety of processed and preserved foods.
  • Create new and acceptable foods from various raw agricultural materials to meet the world’s rapid population growth.

Food ScienceTechnology for the 21st Century

You may want to choose Food Science as a
career if you’re interested in:

  • developing new food products, processing methods, or distribution techniques;
  • applying your expertise in areas such as microbiology, biochemistry, and engineering to understand the nature of food and its components;
  • understanding and improving the nutritive value of food products;
  • applying bioactive compounds in foods to human health;
  • maintaining high standards of safety and sanitation and managing the quality of an ever-increasing variety of food products; and
  • supervising raw material procurement or managing any aspect of a food processing operation.

The Program

Food ScienceThe Food Science program at the Univer-
sity of Kentucky is the only such program in the commonwealth that offers a B.S. degree in Food Science. In fact, UK is one of only 43 colleges and universities in the United States with a food science program approved and accredited by the Institute of Food Technologists, a professional organization of over 30,000 members.

There are more professional jobs in this field than there are food science graduates.

Our low student-professor ratio allows us to provide more individualized attention. A faculty advisor will work closely with you to plan a sequence of courses that meets your needs for academic and professional success and also fulfills graduation requirements.

We take pride in making students feel a part of the Food Science program in the Department of Animal and Food Sciences in the College of Agriculture.

We are committed to providing you with a professional level of education to enter the food industry. We have been training students since the 1970s and are dedicated to offering the best scientific training for successful and productive food-related careers.

Food ScienceOur graduates are employed in the industry, academia, and government throughout the U.S. and in foreign countries. Many students also use food science as a pre-professional program for medical, pharmacy, and veterinary schools.

 Special Opportunities

  • Scholarships are available through our own program as well as the College of Agriculture, the University of Kentucky, and numerous professional organizations including the Institute of Food Technologists.
  • On-campus jobs provide income as well as hands-on learning experiences in labs and other non-classroom settings.
  • Internships are available with food companies in Kentucky and elsewhere. Juniors and seniors may obtain credit for a summer internship; it’s a unique opportunity for an inside view of the industry.
  • The Food Science Club is a student organization that gives you the chance to network with others in the program as well as visit with recent graduates working in the food industry. You’ll socialize, make new friends, develop leadership skills, and have the opportunity to learn about food science outside the classroom.

Food processing is one of the largest manufacturing industries in the U.S. and employs about 2 million people. Another 14 million work in food-related fields. In Kentucky, food manufacturing ranks third behind machinery and automobile manufacturing and employs about 37,000 people.

Food Science graduates are among the highest paid agricultural scientists. The enormous size of the industry and its need for professional scientists means that it offers you a wide variety of satisfying career choices.
